out of curiousity, wont you get readings on the tank anyways once you go to put it in the tank for the set-up. asking cause my old tank the rock came from a established set-up, never seen air for more than 10 sec, was cured for another 2 months in a tub, with skimmer and once a month water change, set in tank for another month, but i still went through a mini cycle.

depending on how you cook the rock there may be something left in the rock to cause a spike.

when my rock cooking was done I had just rock, it was pure white, nothing organic on it. by the time it went into the tank it was just rock with a little bacteria on it. there was nothing on/in it to pollute the water with, it was just a new surface for bacteria to grow on.
