Dough??? are you making your own rolls??? LOL You should not put corn flour in meat.... Add some panko bread crumbs in you really want to, but should not have to.

You should not handle the meat more than you have to. Make a nice TIGHT pattie.

How are you cooking? Frying Pan? Grill?

Make sure that the pan is hot so that it sears the meat and will help hold it together.

LOL When I say doug I actually the ground beef that looks like bread doug. So maybe I have to knead them right just like bread doug. :lol_large
I pan fry my hamburger meat.

About your sauteed onion, it looks like there is not much liquid in there, and heating for 20-30min would not burn them? If they are starting to get very dry and may go to burn, what to do then? Thanks.

I have never heard anyone saying the ground beef looks like bread dough!

You do not want to knead the meat....

With the onions. the Salt that you add will draw out the water in the onions. You need to really keep on top of them and stir them till they cook down, then you turn heat all the way down and let them soften up.

If you are frying your burger make sure you put some oil in the pan first and make sure it is HOT before you put the burger in.

Epididymis? Or Epicurious????

LOL!

Sorry Pal had to define that for you!

The epididymis ( /?p??d?d?m?s/; plural: epididymides /?p??d?d??mi?di?z/) is part of the male reproductive system and is present in all male amniotes. It is a narrow, tightly-coiled tube connecting the efferent ducts from the rear of each testicle to its vas deferens. A similar, but probably non-homologous, structure is found in cartilaginous fishes.

WTF is on your mind???

My wife asked me to make something quick and light one day since she was working late so I whipped up this recipe from a cooking light magazine. Its been our go to recipe for a quick light meal lately.

Ingredients

  • 4 cups loosely packed baby arugula
  • 1 cup (1/4 x 3-inch) julienne-cut red bell pepper
  • 1/2 cup matchstick-cut carrot
  • 3 tablespoons extra-virgin olive oil, divided
  • 2 teaspoons minced fresh rosemary
  • 1/2 teaspoon crushed red pepper
  • 2 garlic cloves, thinly sliced
  • 16 large peeled and deveined shrimp (about 3/4 pound)
  • 3 tablespoons white balsamic vinegar
Preparation

  • 1. Combine the first 3 ingredients in a large bowl.
  • 2. Heat a large skillet over medium heat. Add 2 tablespoons oil to pan; swirl to coat. Add rosemary, pepper, and garlic to pan; cook 2 minutes or until garlic is tender, stirring constantly. Increase heat to medium-high. Add shrimp to pan; saut? for 6 minutes or until shrimp are done. Remove shrimp mixture from pan. Add remaining 1 tablespoon oil and vinegar to pan; cook for 15 seconds. Drizzle warm vinegar mixture over arugula mixture; toss gently to coat. Divide arugula mixture among 4 plates; top with shrimp. Serve immediately.

The bell peppers work real well with the spicy shrimp.

Hey what a great idea for a thread!!! (a little off topic but GREAT nonetheless) I love to bake and cook!! A friend of mine and I just started a recipe exchange at work via email...I work with mostly guys and it's great because they always have a different spin on things....I'll throw out a recipe for a great appetizer:
Mushroom Bread
10-12 baby portabello mushrooms (chopped very fine)
4 tblsp. butter
1 lb mozzarella cheese (shredded)
3/4c. butter, softened
8 green onions, chopped
1 c. mayonnaise
1 loaf of sourdough bread (or any bread of choice)
--preheat oven to 375 degrees
--sautee chopped mushrooms for about twenty minutes, until soft
--cool about 15 minutes, then add green onions, mix well
--add remaining ingredients, mix well
--slice bread lengthwise and spread mixture covering the entire loaf
--bake in oven for about 30 minutes or until top starts to bubble and turn light brown
Enjoy!!!
People who do not like mushrooms taste this and love it....Hope someone gets to use it!!

Since its reef related and I have been seeing them alot in the markets. Scallops on the half shell.
Ingredients:
Scallops (the ones with shells)
olive oil
lime
red pepper flakes

wash and thinly slice the scallop and arrange the slices into a circle on their respective shells.top with olive oil, some lime juice and a few red pepper flakes.

For those of you who dont want to eat it raw, you can also add lime zest and broil it on hi for 2 minutes.
