Could anybody please tell me how to open the new files *.jpg ? I've tried three image managers but all I see is a page full of letters and numbers or a blank page.

I can open them fine with PMView 2000 ( http://www.pmview.com/ ), however, the quality is such that they are very difficult to read and some are completely unreadable.

Pages 211-213 of your book are completely unreadable. The other pages give me a headache just reading a few lines.
The problem I see is the quality level set in the options for the JPEG format. If you were to bump it up 10 or 20% there would not be so much dithering.
If I had a copy of the book, I'd be willing to scan a few pages, but alas, I am one of those that need the scans.
I hope the dental appointment goes OK.

An alternative format would be GIF. If you converted each page after scanning to 256 colour (8 bit) you could save as GIF and the file sizes would be quite small and yet the quality would be better. The photographs would not be of good quality, but they are less important than the text.
