chief - i don't know whether anyone said this or not, (I think not) but i think your problem was that you let the meat marinade overnight. beef requires overnight marinade -- chicken can take just a few hours, and fish even less... Ceasar dressing has a lot of vinegar, yes? that will cook the chicken, so when you put it on the grill, it was already "cooked"... :(

Listen you guys are killing:tank: me with all this vinegar, Try some fresh fruit :scratchch Especially peaches. If you like dry BBQ use some citric acid grapefruit, oranges, even kiwi.. For a great tasting steak rub some bananas on it while its cooking, then enjoy a :beer: with.....AAAAhhhhhhh... I'll be back... I need to rub some fruit on my meat.

I said nothing about vinegar! I said use alcohol! The tequila doesn't break down meat as quickly and lets the other flavors in the marinade soak in overnight. It cooks it a little, but not nearly as much as vinegar.

Crox I have an electric stove and oven that's Y I am very interested in chicken recipes, I barbecue steak all year round and burgers too. Jim, Eric and all else who have made the challenge I will be a willing participant in the competition as a taster. Let me know and I will be there. Eric, just go easy on me if I drink soda, don't know if I can get the nite off of work :biggrin:

For chicken, it's okay to let it go overnight or longer. Many many many days working in a kitchen the chicken cutlets came out of the maranade 2-3 DAYS after they went it.

Chief, Jim was spot on about the cook time. HOWEVER. did you cook bone-in or boneless breasts? Bone in will take about 25 minutes on indirect heat. (heat the oposite side of the grill than what you're cooking on. it's more like baking it with more flavor.)

Boneless should be 2-3 minutes per side on a high grill. Spray the COLD grill with pam before you lite it and it won't stick.

what I usually do chicken in.

olive oil.
beer
cayene
tumeric
corriander (toast it)
salt (who cares what kind. mortons, kosher, whatever is lying around. it's all NaCl, no matter what shape. if you're using sea salt it's different because of the makeup of salts)
lime or orange juice.
black pepper

On the grill and it rocks.

ANd the cook off will have to be somewhere else. I only have 1 weber grill. so it's just one at a time.

However I should have a bbq once my tank is set up.

I killed it. It was windy and the cover was closed but they were thick boneless breasts of chicken and I ruined them bad.

Here is how i do it :)
marinate the chicken in BEER :beer: over night.. Then you mix some Spicey BBQ suace with peper salt paprika and a lil spicey spices.. your choice..
Till you get a thick paste.. Put that mix in a zip lock.. throw the chicken in there.. Then let it marinate for another 1/2 hour
then put it on BBQ on light flame till nice and crispy..
Then eat... Is moist and spicey....

First warm day and we are grillin'... Some of those recipes sound good and some sound crappy... sorry. and no one mentioned injection???. Depending on the type of marinade you can do overnight and some only a few hours (citrus cooks meats people).

Damn you guys need help and no Coors Lights for me (cheap bastards) ;)

Cough - I said it earlier - the technical term is called a Cevich - it's is most common with fish using fruit juices (most commonly lime and with scallops) but marinating it overnight is over-kill -

Eric, You're on - I don't use a dry rub, that is way too TV gone bad for me - I'l; bring mine you bring your's MR Members vote and beer is on the loser!

Who's down. I am pretty much free weekends after the swap.

I'll bring 6 full racks (of ribs, nice try Devious)
