If the fish decide to take a jump, or swim up... anyone want fish N chip?

Seriously, there is a mechanical barrier for this purpose. As to why the hell anyone want to eat the tempura that has direct contact with wastewater, it is beyond me.

My guess is that there is a stainless steel mesh, and there is a middle oil layer that is not directly heat. When oil is heated, it convects a lot, and it will look like a big storm if you look up thru the oil/water interface. If you look at the video, it is not the case, so there is a thick unheated layer there. Trust me, you don't want water to be anywhere near its boiling point, no matter how little of it is there.

Lol, I'm wondering it they just deep fry the dead ones and sell them to unsuspecting customers....
