in the wild fish dont jump out of the water or at least i dont think they do, so how come some fish jump out of reef tanks?

Stress (fright, enviromental, sickness, harassment), feeding response (hunger), lack of space, boredom, curiosity, genus (many are more prone to jumping) just to name a few. And yes fish do jump in the Ocean.

I once saw a whole school of fish jump out of the water. The noise was deafening and I needed a laundromat after that.

Don't some fish also live in very shallow water... and they jump from one small pool to the other? Like some gobies or dartfish?

The other thing to consider is that when fish living in the ocean jump out of the water, they typically land back in the water. So the issue isn't so much whether or not they jump (some do) it's where they land. :)
