I read your post to mean that you got your tang on wednesday... he will soon rule the roost. I wouldn't worry. He will soon be a pig when it comes to feeding time.
I second the advice on nori. Also, the more time you spend in front of the tank the less shy he will be, IMO.
I feed my tangs the following on a rotating schedule:

The mysis shrimp are a favorite, and I usually soak them in selecon. My understanding is that they are very nutritious, as opposed to brine.
Basically I feed twice a day. Once is the spirulina flake food (morning) and the afternoon I feed the mysis shrimp every other day. On the non-mysis shrimp day, I rotate formula 1 and emerald entree.
I would be happy to e-mail you (or anyone else) my feeding schedule. I have it typed up for the wife when I travel.
