The ammonia concentration you saw is not congruent with the circumstances you reported UNLESS you added a HUGE amount of food - and if your tank has been set up for a year, I'm not sure how that could happen. Did you have somebody else feed the tank? Another option could be that your ammonia test kit is reading improperly - try testing some tap water, it should read zero. If it reads high, then your test kit is the culprit.

You need to work at getting the ammonia level below 0.30 ppm. You can do this through a series of properly done water changes and/or adding Amquel. You also need to continue siphoning the bottom to get out ALL of the uneaten food.
