Garlic is meant to stimulate the appetite of fish. I've only used it when adding a new fish that's having issues eating. Once they're eating, I no longer add any garlic. I don't see any added benefits of giving garlic to fish that is already eating.

If you're going to start introducing SPS, alkalinity is arguably the most important parameter to test. After a while, you'll have an idea of how much Alk your tank consumes and you don't need to test as often. Calcium is also important to keep stable but there's a wider range than alkalinity...

No need for DIY LEDs. Chinese black box LEDs nowadays perform much better than they used to. Lighting isn't everything anyway. Plenty of corals for sale by hobbyists at a good price (just don't pay them LFS price).

1 dKH/week is not a big deal at all. If your corals are healthy, they could tolerate this swing daily without issues (not that I'm recommending it).

I miss my reef more, for sure, lol. I'm curious to see what new corals are available whenever I return to the hobby. I'm sure bounce mushrooms will be available for $10 by then

I don't think it's that big of a deal from a structural standpoint. Just split the difference on either side so the tank only overhangs by 1/8" on each side. If you're worried about the aesthetics, then just buy some decorative wood trim that you can secure to the stand to hide the overhang
